DipNation Carbonara
Serves 2

Ingredients
- 160 – 200g pasta
- 1 tsp olive oil
- 2 shallots or a small onion, chopped
- 4 rashers of bacon, diced (preferably streaky bacon)
- 1 tub of DipNation Roasted Red Pepper OR Sun Dried Tomato (whichever you prefer)
- 2 eggs, beaten
- 2 tbsp double cream
- 2 tbsp fresh parsley, chopped
- Grated Parmesan cheese to serve
- Salt & pepper
Method
Put a large pan of water on to boil for the pasta. Salt the water generously and once boiling add the pasta.
Heat the olive oil in a frying pan to medium heat and fry the shallots and bacon. Once they have started to brown a little and caramelise, add the tub of DipNation and double cream and heat through.
When the pasta is cooked, drain and immediately add the beaten egg and stir through to cook the egg. Then add the bacon and DipNation mixture until the pasta is evenly coated. Season with salt and pepper. Serve and garnish with some grated Parmesan and the chopped parsley.
