DipNation’s Corn Fritters
(Makes approximately 24)

Ingredients
- 80g plain flour
- 2 eggs
- 100ml milk
- 1 tub of DipNation Roasted Butternut and Sweet Chilli Dip
- 300g fresh corn kernels (roughly 3 whole corn on cobs)
- 1 shallot or half an onion (finely chopped)
- 1 red chilli, finely chopped (optional)
- 2 spring onions, finely chopped
- Small handful of coriander, chopped
- Small handful of parsley, chopped
- 100g small cooked prawns (optional)
- 1 lime, cut into wedges to serve
Method
First make the batter; put the flour into a mixing bowl, make a well in the middle and crack the eggs into it. Stir with a spoon and gradually incorporate the flour. Add the milk and stir in (don’t worry if it’s a little bit lumpy). Next stir in the tub of DipNation.
Mix all the remaining ingredients into the batter.
Heat some oil in a frying pan to a medium-low heat.
Place small spoonfuls of the mixture into the frying pan and fry for two-three minutes on each side until golden.
Remove from pan and place on some kitchen paper to soak up excess oil and allow to cool slightly. Arrange on a serving dish and squeeze the lime juice over.
